We have a great selection of stout flavours which means we have been able to share a variety of dessert recipes to compliment each one. You can’t go wrong with a big chocolate and vanilla cake, perfect if you have a birthday coming up.
To prepare, preheat oven to 350°F. Butter two or three round cake pans ideally with 2-3 inch-high sides. You can make this cake with two or three layers depending on how many cake pans you have available.
To start you will simmer the can of ‘Call it Something Nice’ stout with the butter in large pan over a medium heat. Add the cocoa powder and whisk until the mixture is smooth. Let this cool slightly and set aside.
Next whisk flour, sugar, baking soda, and salt in large bowl to blend. Using electric mixer if you have one (if not, elbow grease works fine) whisk the eggs, vanilla essence and sour cream in another large bowl to blend. Add the stout-chocolate mixture to egg mixture and combine. Add the flour mixture and gently fold together. Divide the cake mix equally across the two cake dishes. Bake cakes for about 35-40 minutes. Once cooked, these will need to cool before you can apply any icing.
Bring the cream to simmer in pan. Remove from heat and add chopped chocolate and whisk until melted and smooth. Refrigerate the mixture until the icing is spreadable, stirring frequently.
Place one cake layer on plate and spread part of the icing mixture over. Add the second cake and spread remaining icing over top and sides of cake.
